Missouri has named the crawfish as the official state invertebrate. A group of sixth-grade students in Springfield, Mo., pushed for the legislation as part of a class project, according to The (Springfield) News-Leader. In a move that will put any Cajun's teeth on edge, they refer to the tasty crustacean as a "crayfish”. The students at Reeds Spring Intermediate School say they chose the crawfish as the state invertebrate because there are more than 30 species in Missouri, including eight that aren't found anywhere else.
