You can do that now if you want. I just finished putting in the last 5 or 6 weeks of the NFL season, so all the regular season SEC and NFL games are set. All you'll need to do is make the SEC Championship pick at the end of the season (for the SEC Pick 'ems), and all the NFL playoff picks at the end of the season (for the NFL Pick 'ems). Obviously, those games can't be input until they're known.
