It ain't the latter. I worked my way up the culinary ladder from run of the mill to James Beard award winning over 16 years before deciding to change directions. I know plenty about food.  I'm heading down to Hilton Head next month, gimme some recommendations on what's real deal.

HH, I don't know. Columbia or Charleston I can tell you 20 different places with great BBQ and 100 with great food period.

We do a Worcestershire and vinegar based sauce/mop in Kentucky.  Each state has their own take on BBQ.  I do remember having NC BBQ as a kid and thinking it was horrible.

I like the Carolina mustard sauce. Some are better than others. Same goes for the red sauces. but I  like trying BBQ  everywhere I go when I can. there are many varieties out there. I have had some vinegar base sauces that were clear but taste great. The bama white sauce took some getting use to, but I had one that was pretty good. As for NC-I keep hearing negative feed back. I ate ribs in NC several months ago & it was good. But the sauce was just  little to sweet for my taste.

I ate something once called forbidden black rice at a restaurant in Jackson, MS. Now, I know why that Posted Image was forbidden. It was awful.

It was grilled gulf shrimp on a bed of the rice. I ate the shrimp and left the rice. The fried mushroom appetizer was good, tho. And the wine was stout. The wife got grilled grouper smothered in cheese. Hers was pretty good.

All in all, not worth the Ben Franklin I plunked down on it to me.
